What You’ll Need
-
Chemex brewer
-
Chemex paper filter
-
Burr grinder
-
Freshly roasted coffee
-
Kettle (preferably gooseneck)
-
Scale
-
Timer
Step 1: Measure & Grind
Use a 1:15 ratio, about 40 grams of coffee to 600 grams (20 oz) of water.
Grind your coffee medium-coarse, similar to sea salt. The Chemex filter is thick, so you’ll need a slightly coarser grind than for a V60.
Step 2: Prep the Filter
Fold the Chemex filter and place it with the triple fold against the spout.
Rinse the filter thoroughly with hot water to remove any paper taste and preheat the glass.
Discard the rinse water before brewing.
Step 3: Bloom
Add your ground coffee to the filter.
Start your timer and pour about 60–80 grams of hot water (just off the boil, around 200°F) to saturate the grounds evenly.
Let it bloom for 30–45 seconds to release trapped CO₂.
Step 4: Pour in Stages
After the bloom, pour in slow, circular motions, keeping the water level consistent and centered.
Add water in 3–4 slow pours until you reach 600 grams total.
Aim for a total brew time of 3½ to 4½ minutes.
Step 5: Serve
Once the coffee has finished dripping, remove the filter and give the Chemex a gentle swirl to mix the brew evenly.
Pour immediately into your cup or carafe and enjoy.
